This incredibly uncomplicated recipe is delicious and healthy. Made with only a handful of ingredients, the soup is flavorful, yet filling. Low Carb Sausage Soup
An unknown author said, “Real cooking is more about following your heart than following recipes”. Real cooking to me is about finding the easiest and fastest way to create a recipe yet it still tastes amazing. Though I have recently started sharing my recipes, I must admit I do not like to cook. It is a necessary evil, therefore I only make recipes that are easy and use less than 10 ingredients. If the microwave can be used to shorten the cooking time, I do it. This recipe is no exception.
Here is my disclaimer: If you like fresh produce, buy it. It you like to get your food on the table in the least amount of time with the least amount of effort, follow me for more recipes. You can purchase fresh produce to make this low carb sausage soup, however I buy frozen vegetables and if I can get them steamable, I do that to cut down on the cook time. I also like to use my crockpot. This allows the soup to simmer and the flavors to meld. If you do not have the time to get this soup together and in the crockpot, you can certainly make this soup on your stovetop letting it simmer for about 30 minutes.

Keto Cauliflower Soup With Bacon
The most complicated part of this recipe is cooking the Italian sausage. I recommend browning the Italian sausage with the kale so the kale has additional time to become tender. If you purchase fresh cauliflower for this recipe, you should add it with the sausage and kale as well. Drain off any grease.

If you purchase frozen cauliflower as I did, steam the bag of frozen cauliflower in the microwave for 5 minutes.

Cut the cauliflower into small pieces. It should be tender enough to cut easily.

If you prefer to make bacon, you should cook your bacon. I am lazy and used pre-packaged bacon pieces which I found on the salad dressing aisle of my grocery store.
I used my crockpot, however if you choose to use the stovetop you can just add your ingredients to your saucepan in which you browned and drained your sausage and kale. Combine heavy whipping cream, chicken broth, the sausage and kale mixture, cauliflower, minced garlic, and bacon pieces.

Set the crockpot to high and let it cook for 1-2 hours.

Serve.
