This recipe has only 6 ingredients, is ready in less than 20 minutes, and is absolutely delicious. Mexican Mac And Cheese is the perfect combination of spicy and cheesy. My family inhaled this meal and asked me to add it it to my weeknight meal rotation. I will gladly oblige as it was incredibly simple to make taking only a few minutes from start to finish.

The ingredients for Mexican Mac And Cheese include either chicken or ground beef, Velvetta Cheese, cream cheese, a can of Rotel, taco seasoning and a box of macaroni.

I used chicken though I think ground beef may take this recipe to the next level (I will update this recipe when I try it). I added some garlic, Cavendar Creek Greek Seasoning, and onion powder to the chicken breast while cooking my chicken. In addition, should you decide to use chicken, you will need 2 tablespoons of olive olive oil to cook the chicken in.

Steps To Making Mexican Mac And Cheese

The steps to making Mexican Mac And Cheese are so simple.

Step 1: Fill a saucepan with 4 to 6 quarts of water. I add a dash of salt to the water. Put it on the stovetop burner and bring the water to a boil. While the water is heating, start your sauce.

Step 2: Cut up two chicken breasts into bite size chunks. Add 2 Tablespoons of olive oil to another saucepan/frying pan. Turn the stovetop burner to high heat and add your chicken. You can add any seasoning of your choice to the chicken. I used garlic powder, onion powder, and Greek seasoning. Stir the chicken frequently for about 5-10 minutes until the chicken is no longer pink and cooked through.

Step 3: When the water has come to a rolling boil, add the pasta of your choice. I used macaroni elbows but any pasta will work for this recipe. Boil until the pasta is to your liking. I like my noodles soft with no crunch. This took about 10 minutes. Drain the water from the pasta.

Step 4: While your pasta is cooking, add 1/2 block (8 ounces) of Velveeta cheese cut into cubes, one block of cream cheese (8 ounces) cut into cubes, a can of Rotel, and a packet of taco seasoning to the cooked chicken.

Step 5: Turn the stovetop burner heat down to medium. Stir the cheeses in with the chicken. Put a lid on the pot to assist the cheese in melting. Stir frequently.

Step 6: When the cheese has completely melted and looks creamy, add the cooked pasta to the sauce. Stir to combine.

Add pasta and stir to combine.

Step 7: Serve with a salad and that is dinner!
