Keto Ham And Egg Cups

This recipe for Keto Ham and Egg Cups is a great healthy breakfast. You can make them ahead of time for an easy grab and go option to save time on busy mornings. Just reheat them in the microwave.

My family loves breakfast for dinner. These egg cups are a great dinner paired with a side salad topped with low carbohydrate dressing. The whole family will enjoy them!

The key to making these Keto Ham and Egg Cups is to use a muffin tin sprayed with olive oil. They are easy to remove from the muffin pan and then maintain their shape. You do not need cupcake liners.

This recipe makes 12 ham and egg muffins. I used a 6 count muffin tin and made two of them.

Steps To Making Keto Ham and Egg Cups

Preheat your oven to 375 degrees.

Spray your muffin tin or muffin pan with olive oil or nonstick cooking spray.

Line each of the muffin cups with sliced deli ham. I used two slices of black forest ham in each of the cups, but any ham will work.

You can add any low carb toppings or filling you like. I used sweet onion and cheddar cheese. You could add shredded cheese, green onions, green pepper or bell pepper, feta cheese, red pepper flakes, even bacon or sausage. Fill the ham cups half way with the filling of your choice.

In a separate mixing bowl, crack six large eggs. Add about 1 tablespoon of heavy whipping cream.

Sprinkle the egg mixture with salt, black pepper, garlic powder, and onion powder. Whisk the eggs, heavy cream, and seasonings.

Whisk six eggs and seasoning.

Pour the egg mixture into the muffin cups over the ham and filling. You will want to leave a small amount of room in each cup to allow the egg mixture to cook and puff.

Place the filled muffin cups into the oven. You will bake until they are firm. The cook time should be about 20-25 minutes. Use a fork to prick the middle of each egg cup to determine if they are firm. If not, continue cooking until the middle of each Keto Ham and Egg Cup is cooked solid.

Bake at 375 for 25 minutes

Using a fork, you should be able to easily remove the egg muffin cups lined with ham from the muffin tin.

The Keto Ham and Egg Cups will come out of the muffin tin with a fork.

Storage and Reheating Leftover Keto Ham And Egg Cups

Store the leftovers in an airtight container or freezer bag.

You can reheat the leftover Keto Ham and Egg Cups in the microwave. Each cup should be heated for about 20 seconds on high.
