My son is a huge Mexican food fan. If we could have tacos, nachos, or empanadas every single night for dinner he would be a happy kid. Most evenings I fly by the seat of my pants when it comes to preparing a meal. Last Tuesday evening, I was at a loss for what to create. After opening the freezer and the refrigerator, all I could come up with was a handful of mismatched ingredients. My son and I came up with this recipe forever known in our house as Taco Cups Of Love.

How to Make Taco Cups of Love
Ingredients
- One pound of ground chuck. You can use any ground beef you like, however the lower fat content, the better in my opinion as you get more beef and less grease
- Eggroll wrappers. You can find these in the produce or deli section of your grocery store
- Cheddar cheese. We prefer sharp cheddar but your favorite cheese will work
- 1 packet of taco seasoning
- 1 teaspoon of garlic powder
- salt and pepper to taste
- Optional: black beans, corn, Rotel or salsa, sour cream and any other taco/nacho toppings you want to incorporate.
Instructions
- Preheat the oven to 375 degrees
- Grease your muffin/cupcake tins with Pam or Olive Oil cooking spray.
- Slice the eggroll wrappers into triangles by slicing in half diagonally.
- Add a triangle to each of the muffin tins.
- We like our taco cups crispy. For this reason, we baked the eggroll wrappers before putting any toppings inside. We baked them about 10 minutes or until they were browned and appeared to be crispy.
- While you are crisping your eggroll wrappers, brown the ground beef.
- Drain off any grease.
- Add seasonings and the black beans, corn, and Rotel if you choose to use it. Stir until combined.
- Once your taco cups are crisp, add the beef mixture. We found it took about 2 tablespoons to fill the cup. Make sure you leave room to add the cheese on top.
- Sprinkle the top of each taco cup with cheese.
- Bake for 15 minutes.

To remove the cups from the muffin or cupcake tin, I used a fork on the side. They just popped right out. Top them with sour cream, salsa, and any other of your favorite taco/nacho toppings.
Reheating Taco Cups of Love
If you happen to have any leftover taco cups (we sure didn’t), I recommend reheating them in the oven. Simply heat the oven to 350 degrees and heat for about 10 minutes. This will provide you with a crispy taco cup of love.
