I spend way too much time contemplating what to make for dinner. Even when comprising my weekly grocery delivery order, I struggle to get excited about dinner. Chicken again!? What can I possibly create this week that will make boring chicken seem amazing?
I will admit I threw this chicken taco casserole recipe together simply because I had leftover chicken from a whole roasted chicken I had made the night before in my Ninja Foodi. What can I create that will put some pizzazz in leftover chicken? Why not a savory Mexican casserole that includes cheese and the comfort of crescent rolls? I must say this turned out delectable and I can foresee making it again but trying ground beef instead of chicken.

Savoury Chicken Taco Casserole Recipe
You will only need two cups of shredded chicken, a can of black beans, a can of cream of chicken soup, a packet of taco seasoning, cheddar cheese and a can of crescent rolls to make this recipe.
I had leftover chicken from a recipe I had made the night before. If you do not have leftover chicken, you will need to cook two large chicken breast. Easily cook chicken in the crockpot by placing the frozen breasts in the crockpot and cooking on high for 4 hours. You can also effortlessly cook two chicken breast in your Instapot or Ninja Foodi in a matter of minutes.
Ninja Foodi Chicken Recipe
To quickly cook two chicken breasts, I like to use my Ninja Foodi. Add two frozen chicken breasts to the removeable pot along with one cup of water. Put on the pressure lid with the valve sealed. Set on high and pressure cook for 25 minutes. Quickly release the steam by moving the valve to Vent. Remove the chicken and shred.

The Chicken Taco Casserole
Preheat your oven to 375 degrees.
Open and drain the can of black beans. Combine the beans, cream of chicken soup, and packet of taco seasoning.


Shred or cube the cooked chicken. Stir the chicken into the mixture.
Place the chicken mixture into a pyrex casserole dish.


Top the mixture with the shredded cheese. I used Queso Quesadilla shredded cheese. You can use whatever cheese you have on hand.

Cover with a layer of crescent rolls.

Bake at 375 degrees for about 20-25 minutes until the topping is golden brown.

Cut and serve with your favorite vegetable or Mexican rice. Top with your favorite taco topping such as green onion, sour cream, guacamole, salsa, etc.
