Ninja Foodi Chicken Alfredo Soup (KETO)

Ingredients

  • 2 chicken breast
  • 1 cup water
  • 3 cups heavy whipping cream
  • 1 cup shredded parmesan cheese
  • 1 cup grated parmesan cheese
  • 1 stick salted butter
  • 4 ounces cream cheese (cut in pieces)
  • 2 tbsp minced garlic
  • 1 cup shredded mozzarella cheese (optional)
  • salt and pepper (to taste)

Instructions

  • Place the two chicken breasts in the removable cooking pot with one cup of water. Add some spices of your choice (if you want). I added garlic powder and Cavender's Greek Seasoning.
  • Add the pressure lid in the sealed position.
  • For two nice size, thick, frozen chicken breasts, I cooked on High for 20 minutes. Quick release of the pressure. Note: if your chicken is thawed, cook for 15 minutes.
  • After cooking the chicken breast, shred the chicken. Note: Do not throw away the broth left in the removable pot.
  • Leave the broth in the pot and add the chicken back to the pot.
  • Switch your Ninja Foodi to the Sauté feature on high
  • Add butter, heavy whipping cream, water, cream cheese cut into pieces, shredded parmesan cheese, grated parmesan cheese, and minced garlic.
  • Stir frequently with a plastic spatula or spoon so you do not scrap the non-stick coating from your Ninja Foodi.
  • As the mixture starts to boil, change the sauté setting to Medium.
  • Let cook for about 15 minutes, stirring frequently.
  • When all cheeses are melted and the sauce is creamy, turn off the heat. Shut the air fry lid and let sit for 10 minutes to thicken.
  • Serve and enjoy!
